If you are looking for a good 2 day one night ride, here it is.
From Cedar City travel to Paragonah (north of Parowan). Take Red Creek Reservoir Road to Red Creek, to Horse Valley to Panguitch Lake. Have lunch at the Hamburger Barn. Travel from Panguitch Lake to Hatch, Hatch to Proctor Canyon. Proctor Canyon to Foster's Stake House and motel (close to Ruby's). Enjoy the cheap rooms and prime rib. Next morning have breakfast at Foster's or homemade doughnuts at the bakery. Travel to Lime Kiln (and/or Casto Canyon) depending on size of rig. From there to Panguitch City for smoked meat at the Cowboy Smokehouse. Panguitch up 5 mile road past the lumber mill. Keep going until you turn off a somewhat narrow ATV/sidexside trail that takes you to the Sandy Peak Loop. From there you travel some fun trails to Little Creek Road (north takes you to Bear Valley hwy), south takes you to the north canyon in Paragonah. Depending on side trips this can be a 200+ mile trip. With lots of places to see sights, take pictures, and eat lots of good food. NOT recommended during winter/early spring since a good portion of the trails from Paragonah to Hatch will have lots of snow. Best time is end of September when the leaves are turning. Take your fishing pole for some fishing at Red Creek Reservoir and Panguitch Lake.
